where his recipes quickly became the standard

their
5 restaurants. Later Utam spent a 40
month term
as
banquet chef for the massive Renaissance
Mumbai
hotel and convention centre where he opened the
Newab Sahib Indian restaurant as Master Chef leading
a
team of 12 chefs and 40 commis.

Club in Brunei where he
cooked for the Sultan.
